Zesty Caesar Dressing

Zesty Caesar Dressing

  • 1 Immersion Blender or blender, whisk
  • 1 pint sized mason jar and lid or other taller mixing container. Mason jars are great for this and other dressing recipes with lids for storage.


  • ½ cup Extra Virgin Olive Oil
  • ¼ cup Apple Cider Vinegar
  • ½ cup Parmesan finely grated
  • 1 Tbls Lemon Juice fresh, or bottled (no preservatives)
  • 1 tsp Dijon Mustard
  • ½ tsp Black Pepper
  • 1 tsp Honey Raw honey preferred.
  • 1 Tbls Water
  • 1 Garlic Clove Crushed
  • 1 tsp Capers
  • ½ tsp Anchovie Paste OPTIONAL. You can use up to 1 tsp. or more pending your tastes.


  • Pour all ingredients into jar and blend until smooth.
  • Chill in refridgerator until ready to use. Let sit out for at least 10 minutes if it hardens while chilling and give it a quick whisk before dressing your food.


Add salt to taste if needed, but note it is naturally salty already with the parmesan and optional anchovies.  So, give it a taste test first.
I like to dress this over my salads throughout the week.  Chicken Caesar Salads in my house, tossed with fresh grated parm. and croutons (homemade), are a delight.
Other options:
*2 pitted kalamata olives instead of capers, or both!  Why not!?  
*Add 1-2 Tbls. Greek Yogurt for a creamier texture if needed.
