Simple Roast Leg of Lamb

  • 1 5 lb Leg of Lamb Boneless (bone in may take slightly longer in time if used).
  • 1 Tbls Avocado Oil
  • 1 Tbls Garlic Powder
  • 1 Tbls Fresh Rosemay chopped
  • Salt
  • Black Pepper


  • Preheat oven to 400℉.
  • Place lamb in baking dish,fat side up, and coat in oil, garlic, rosemary on ALL sides. Use salt and pepper to taste (this lamb took about a Tbls of salt to spread over whole leg.
  • Roast at 400℉ for 15 minutes, then turn down to 325℉. Roast at 325℉ for about 18 min. per pound until done medium rare. This took this 5lb roast (boneless) about 1.5 hrs more once reduced to 325 ℉ for medium rare. Let rest for 15 minutes, covered, before carving.


Roasting time will vary based on thickness and whether it is boneless or not.  So, make sure to use your thermometer for your desired doneness. Note that during the resting phase the lamb will continue to cook (and temp. rise initially a bit more).
Good served with gravy, cranberry sauce, potatoes, green beans and more.  Make a holiday meal or just enjoy. 
I found this leg of lamb Dec. 2023 for $5.49/lb.  Much cheaper than the $9-$20/lb for beef and some other roast cuts recently.  This roast provided for great dinner followed by good meal prepped leftovers for my family.
