Honied Delicata

This is one I can eat right off the tray. The squash is very versatile, but this recipe makes it a comfort food.

Honied Delicata

Seasonal, sweet Delicata squash.

  • Baking Sheet
  • Knife
  • Spoon for scraping seeds
  • Cutting Board
  • Bowl


  • 2 Medium Delicata Squash
  • 2 Tbls. Honey
  • 1 Tbls. Avocado Oil
  • Salt and Pepper to taste


  • Preheat oven to 400°F.
  • Wash and trim off ends of the squash with a knife.
  • Cut squash in half length wise and scrape seeds away.
  • Slice the squash into 1/2 inch pieces.
  • Place in bowl and toss in oil to coat lightly. Spread on tray in one layer, topping with salt and pepper.
  • Bake in oven for about 30 minutes, flipping carefully half way through cooking.
  • Remove from oven and drizzle honey across squash. Serve and enjoy!


Good thrown into salads, with fruit, or tossed with toasted pine nuts/pumpkin seeds too.  
Leave the skin on.  It tenderizes nicely, provide nutrients, and helps hold shape.
